Lawyers are one of the toughest customers in Diner Dash 5. If multiple groups of them sit together, they make a loud noise when they lose their hearts, and can annoy customers. Lawyers will be happier if they never lose their temper. You need the Librarians to keep them quiet.
The Lawyers also appeared in the background in Avenue Flo 2.

In Diner Dash 5, they work for Mister Big, but they ended up sideing with Flo because they loved her food and service.
